INTRO TO BABE

Writer's picture: Bobby and Candy GattensBobby and Candy Gattens

I may not be able to back the trailer up, get the jacks set right, or figure out the propane tanks, but my talents do lie in the area of food. As part of my domestic engineering duties, I am responsible for keeping everyone feed. A full, content belly is up there with a good night’s sleep in our house. In the back of my head I think, “Keep them full, keep them fresh/rested at ALL times.”

Having a camper brings the perks of a refrigerator, microwave, and complete stove and oven. It’s hard to think of it as “roughing it,” when you take all of those things into considerations. Nevertheless, I won’t be making a Thanksgiving dinner in it….though I do like a good challenge.

Camping is a great way for our family to be able to do the things we love, take a vacation, and not break the bank. We don’t have a set budget, but we do have spending boundaries we like to stay in. Meal planning for a camping trip is just as crucial as it is for your home. When we started out, I would go to the grocery store the day of leaving, grab what looked good, and through it in the rig. After a few mishaps, I had to get organized. My family is very particular in things they like and things they don’t like with meals.

For Example:

We ONLY use Aunt Jemima Butter Lite Syrup. This is a Bobby thing. I agree that it is a far superior syrup to all other syrups, but it’s not my hill to die on. Syrup is syrup to me. If Bobby doesn’t have it, he won’t eat. I was a little worried about the re-branding, but I don’t think he’s noticed yet. We forgot it once. Now I keep a stock of three bottle at all times because we also can’t agree on how much syrup is enough syrup to get through breakfast. Please comment below and let me know we are not the only weird family out there.

Meat must be prepared for every meal. Sausage goes with pancakes, bacon goes with eggs, and ham is a wildcard and can be used in a plethora of scenarios. However, eggs are not meat in our house (eyes roll), and meatless spaghetti might as well be a four letter word.

One can imagine how this was a change for me who grew up in a large family of two full time working parents. Until I started eating low-carb, I didn’t know that cereal was not an acceptable option for any meal/snack. Thankfully we have three food driven pups that have zero problems with eating my mistakes and left overs.

I plan to share my go-to meals, favorite things, wish lists, and lessons learned right here on the website.

Thank you for reading,

Babe
